EVO and Yogurt Loaf Cake


Oddly brilliant: EVO and Yogurt Loaf Cake AKA Extra Virgin Olive Oil and Yoghurt Loaf Cake.

EVO Cake I’d not used olive oil in a cake before and was a bit concerned that the taste might overpower the sweetness of this lime-infused cake with an seriously unwelcome sharpness, however the resulting loaf was light and delicious with only a trace of the olive coming through, offsetting the sugaryness nicely. And it was actually limey. Yum. I was so pleased with this cake that I took its picture.

EVO and Yogurt Loaf Cake

1lb loaf tin, well buttered
180C
50-55 minutes
(I put mine on the bottom shelf in the oven)

190g plain flour
2 tsp baking powder
Pinch salt
200g caster sugar
Zest of 1 lime
125g plain yoghurt (I used greek)
3 eggs
1/4 tsp vanilla extract
120ml extra virgin olive oil
